The Epomeo Passito Sygnum IGT is a unique passito wine that celebrates the winemaking heritage of the Island of Ischia. Made from a blend of Biancolella, Forastera and Levante grapes, it reveals its distinctive character from its bright amber-yellow color.
The harvest takes place in the first week of October, selecting grapes with optimal sun exposure. After harvesting, the bunches are left to dry until December on traditional Ischian racks known as Nasselle, handcrafted structures made from chestnut wood and broom, placed in well-ventilated environments. This process enhances the wine’s aromatic richness and complexity.
Epomeo Passito Sygnum captivates with its expressive bouquet: intense notes of apricot and peach intertwine with sweet hints of dried figs, honey, aromatic herbs and broom flowers. On the palate, it stands out for its depth and complexity, with a long, harmonious finish that echoes its aromatic profile. The fine and persistent perlage further enhances the tasting experience.
Perfect with blue cheeses, foie gras and traditional Ischian desserts, this passito is also an excellent meditation wine. Best served at 14°C to fully appreciate its qualities. Alcohol content: 14.5% vol.
